Mozzarella & Jam Panini

Preston’s weird Peanut Butter Grilled Cheese inspired me to re-create one of my old favorite weird-sandwich combos: a sandwich made with mozzarella cheese and jam.

It’s so good!  Maybe less weird than the peanut butter grilled cheese – just think about a traditional cheese plate.  Fruit, jam, crackers, and cheese.  Normal.  Baked brie with jam.  Normal.

This combo is so fun.  An easy little breakfast or lunch sandwich.  I love it!

Now I just need to find vegan mozzarella that melts as well as those cheddar slices did…

serves 1
2 pieces whole-wheat bread
1/4 C vegan mozzarella
3 T jam of choice
2 t Earth Balance margarine

Heat a nonstick skillet over medium-low heat.  Spread jam thinly on each slice of bread.  Sprinkle mozzarella in the middle and sandwich them together.  Spread Earth Balance on each side of bread and cook until golden brown and the cheese is melty (though you can tell this brand of cheese doesn’t get so melty! My standards are officially higher after that drippy cheddar…)
