Peanut Butter Grilled Cheese

Preston has been telling me since we met that a peanut butter grilled cheese is one of his favorite sandwiches.  Weird.  So weird.

The other night I made a recipe with Daiya’s new cheddar style slices, and he took a bite and said, “you know what this would be good for?”  To which I immediately responded, “A peanut butter grilled cheese.”  I guess if he’s been talking about it that much, it’s time to try it. 

And so I did. 

It is surprisingly delicious.  He said the key to it is a really sharp cheddar.  Being that there aren’t really varieties of vegan cheddar, I gave this a try and it passed his test. 

The sweet peanut butter and the kind-of sharp cheddar actually go together really well.  Plus, these slices melted unbelievably!  I am super impressed. 

I didn’t entirely measure, and this is so not a recipe that you need measurements for.  So here are the steps to make this: 

1. Spread a thin layer of peanut butter on a slice of bread.  Layer three slices of Daiya cheddar on top of one of them, and cover with the other peanut butter-spread slice.  

2. Heat a large nonstick skillet over medium-high heat.  Spread a very thin layer of Earth Balance on the outside of the sandwich, and put that side down in the skillet.  Spread another layer of Earth Balance on the other side.  

3.  Flip over when the cheese starts oozing.  Cook until both sides of the sandwich are golden brown. 

Enjoy! 

I served it with apples just because a chilled apple in my fridge looked good to me, but they were perfect for scraping up the melty cheese that winds up on your plate.  Apples + cheddar = 😀

    I do this with coconut oil instead of earth balance… gives it more of an authentic greasy grilled cheese taste! The key is to make sure the oil is properly heated in the pan before frying the sandwich. deeeelicious:) Thanks for the post!
