Sweet Apple Cider Oatmeal

I have been going through apple cider like nobody’s business. I bought a gallon of it in Apple Hill and slowly had a small glass almost everyday until it went away.  Preston tried to pour himself a gigantic glass full and I set him straight 😉 so it lasted for a nice long time. 

Just when I was newly out (and devastated/plotting a return to Apple Hill), I saw that my local grocery store two blocks from me is carrying cider from Apple Hill!


Ummmm delicious cider at my super-close store?  From a local orchard? 

Sold.

A lot. 

And now it’s going in everything.

 


Like my morning oatmeal.  This really isn’t much of a recipe, so much as a recommendation to sub apple cider for water or soy milk that you cook your oatmeal in. 

Cinnamon and maple syrup added, of course (but it’s SUPER sweet when the cider reduces a bit and absorbs into the oatmeal, so just add a touch of syrup because it gives great flavor.)

serves 1
1 C apple cider
1/3 C rolled oats
1/2 t ground cinnamon
1 1/2 t maple syrup

Bring apple cider to a light simmer in a small saucepan.  Add oats and stir frequently until they’ve absorbed most of the cider.  Stir in cinnamon and maple syrup in the last 30 seconds and serve!
