Let me introduce one of the most basic recipes I will ever post on this blog. It is one of my all-time favorite snacks that I’ve been eating since before I can remember.
Growing up, my family was big on slowly snacking throughout holidays instead of big meals. On Thanksgiving, we’d have snacks until dinner instead normal meals. On Christmas, we’d have a nice big breakfast and then snacks the rest of the day. I don’t know how this started or how it became a tradition, but it’s something that I really look forward to.
Most of the snacks are pretty simple and basic – maybe this was my parents’ way of ensuring they spent the holidays with us instead of slaving over a meal we’d spend 15 minutes eating. Even if that wasn’t the plan, that’s the result and I highly recommend it.
Our lineup usually involves some frozen appetizers like egg rolls or chicken(less) nuggets that we just have to heat up. Bread with balsamic + olive oil (or my family’s favorite version that also includes crushed red pepper flakes and minced garlic!) often finds its way out. Conveniently, they’ve all been things that were easy to transition to my now entirely vegan and vegetarian family.
My personal favorite are these simple crackers. They really don’t require a recipe, and it’s the holidays so I’m going to skip that whole nutrition facts part….you know how many crackers are an appropriate amount, so just stick to that.
Here’s all you need to know: take a cracker (usually a wheat thin or the TJ’s version of them), spread with cream cheese, and put a sun dried tomato on top.
It’s nothing fancy, it takes minutes to make, but damn are they good!
