Papaya + Berries for Breakfast In Bed

This breakfast has a very specific purpose: fast breakfast so I have more time to stay in bed with my electric blanket on these cold mornings. 

Confession: lately the number of days when I can only get myself up in time to throw my hair up, do some minimal makeup, and get out the door has sky-rocketed.  I am NOT having the cold mornings.  I tried waking up early to get some things done, but I found myself just turning on my electric blanket and staying in bed (awake or not.)


I still think that’s a terrible idea and I’m working on getting myself up for some more productive mornings.  But just in case that’s still hard, I thought at least it would be a good idea to have something ready for breakfast so I can get up and grab it from the fridge and enjoy it under the warmth of my heating blanket. 

Turns out that’s an awesome idea.  I get up, get a big glass of water and a bowl of fruit (maybe coffee if I’m more motivated) and get back in bed or on the couch for a little blog/book/breakfast-in-bed time, and it’s wonderful. 

Such a fantastic way to ease into the day when I’m dreading getting up. 

I stole the papaya & berries idea from the café at the Monterey Plaza Hotel where I stayed in November.  It’s been in the back of my mind, and I finally got around to making it.

It’s not even much of a recipe, just things to throw in a bowl.  Or maybe that’s the best kind of recipe 🙂

serves 5
1 papaya, peeled and cubed
1 pint blueberries

1 pint raspberries
juice of 2 limes
5 T maple syrup
optional: nuts or granola

I mixed the papaya cubes and berries together with lime juice.  Each morning I’m drizzling some maple syrup on top (probably about 1 T per serving.)  For a little more staying-power, you could add nuts (this cries out for pistachios!) or granola on top.  Hmmmm or maybe avocado?  The fat and fiber content in an avocado really helps keep me full!  I’m trying that tomorrow!!!
