Yes, I said pizza sauté! I really wanted pizza, but decided that my fridge was way too insanely well-stocked to justify going out to buy cheese and a pizza dough. So instead, I used what I had for a quick pizza-like meal and was so happy with it!
A weeknight meal done right. This is so fast to prepare, and tasted wonderful, so I had to share.
It’s a vibrant and healthy dinner, too. All I did was make a super-simple side salad, crisp up some prepared polenta rounds (these are basil and garlic flavored!), and made a little sauté out of faux pepperoni, onions, roasted garlic, and marinara sauce. YUM.
side salad:
1 1/2 C greens
1/4 C basil
2 t sun-dried tomato pesto dressing
2 t vegan pesto mayonnaise
Shred basil, mix together dressing with mayo, and toss everything together for a salad! You can use whatever dressing you want, of course. I have some store-bought sun-dried tomato pesto dressing that is way too tart by itself, so I mix it with pesto mayo for a creamy delicious dressing.
polenta rounds:
cooking spray
5 thin slices polenta (mine is store-bought garlic and herb)
Heat nonstick skillet over medium-high heat. Spray with cooking spray and crisp polenta up!
pizza saute:
cooking spray
4 slices faux pepperoni, quartered
1/3 C kalamata olives, chopped
3 cloves roasted garlic, chopped
1/3 C store-bought marinara sauce
Once you remove the polenta, spray the skillet again. Add the pepperoni, olives, and garlic and saute until heated through and lightly browned. Add the marinara and cook just until heated through.
Serve everything up and you’re done!
