Vegan biscuits and gravy, AH!

Seriously, guys, I’m addicted! SO yummy! Plus, you can whip this up way faster than you’d think.

Last weekend I had some friends over for a birthday brunch. It was a little hectic getting ready for brunch because the day before was Preston’s law school prom. (Yes, I got to go to prom!) But getting ready for a fancy and early evening took up a ton of my prep time. I quickly changed the menu I’d planned so that I could avoid waking up at the crack of dawn the day after prom to go to the store. Everything I needed for biscuits and gravy was already in my house (and probably in yours, too.) I also had a package of Field Roast sausages, which I crisped up for an awesome pairing with the biscuits and gravy.

So Sunday morning I got up after actually getting to sleep a nice full night, and immediately started on the biscuits. I made a double batch of these incredible biscuits from Minimalist Baker (I subbed half the flour for whole wheat pastry flour.) They really don’t take too long to make and I was happy to test out my brand new pastry slab my parents gave me for my birthday 🙂

I popped the biscuits in the oven and got to cleaning up my apartment and getting myself ready. I kept the rest of the meal really simple – juiced some apples for fresh apple juice, got out my stovetop espresso maker and set up a little coffee bar, and sent Preston down to the store for some last-minute blackberries when he got up (because I realized the serious lack of fruit/nutrition with this meal, haha!) I made my cake the day before and just had to frost it in the morning (which I LOVE doing.)

If you can time it to serve the biscuits piping hot, that would of course be awesome, but I decided not to bother. Too much effort, and my birthday brunch should be fun! So I allowed them to cool while I whipped up the gravy and crisped up the sausages. I made the gravy up as I went and was blown away by how great it was. Simplest gravy I could imagine, but flavorful and fantastic. Here’s how:

serves 8
1/3 C vegan margarine
1/2 small yellow onion, super duper finely chopped
1 clove garlic, crushed or minced
1/3 C all-purpose flour
4 C low-sodium vegetable broth
salt & pepper to taste (a good 1/2 t of each is best!)

Heat a large saucepan over medium heat. Melt the margarine and add the onion. Saute until the onion is really soft. Then add the garlic and sauté for another thirty seconds or so. Add the flour and whisk really well, and cook that for about 3 minutes. Then add the broth and whisk whisk whisk whisk until there are no flour lumps in there. Let it simmer, whisking occasionally, until it reaches the right gravy consistency (however you like it!)
