Hey everybody! Welcome back from the long weekend 🙂 I took a nice break and now I’m back with a fantastic quickie recipe.
I have a new pasta obsession. It is a super speedy dish with simple, clean, but wonderful flavors and I can’t get enough of it.
It comes together in less than 15 minutes and is really delicious. You can throw in some more veggies or just double the spinach for a healthier meal. Or pair it with a salad or veggie dish.Â
It’s a slight variation of this recipe from Giada de Laurentiis.
My veganizing substitution: anchovy paste –> vegan Worcestershire sauce.
Try this: add 1 C torn basil leaves when you add in the spinach.
