Got a fantastic weekend breakfast treat for you. I woke up later than usual on Sunday and wanted to bake a fun weekend breakfast without spending too much time on it. I made this on a whim using a spare square of puff pastry I had in my fridge and an old Cooking Light throwback recipe for this apple topping.
I used to looooooove cooking light, and got probably half the recipes I made from there. The other half were Food Network recipes (perhaps you’ve noticed my love for Giada DeLaurentiis on this little blog… 🙂 )
One Cooking Light recipe I loved was a simple French toast recipe with this amazing decadent apple sauté on top. It turns out like the filling in an apple pie or turnover. Who can complain about that? All it takes is a touch of margarine, cinnamon, and maple syrup to turn an apple into a sweet topping!
Here’s what I did!
serves 1
1 square (serving) puff pastry*
1 apple, peeled and sliced
1 t Earth Balance margarine
1/2 t ground cinnamon**
1 T pure maple syrup
* make sure you buy a brand that uses vegetable shortening instead of butter for a vegan pastry!
** you could use apple pie spice, pumpkin pie spice, or cinnamon + nutmeg, cardamom, cloves, etc. for a more gourmet touch
Throw puff pastry in your toaster oven at 400 degrees.
While it’s cooking, get your topping going. Heat a small skillet over medium heat. Melt the margarine in it and add the apple and cinnamon. Saute, stirring often, until it reaches the consistency you want. If you want to leave some bite, it only takes a few minutes. I like mine pretty soft so I let it cook for a good 10-12 minutes. Right when you’re just about done, stir in the maple syrup, sauté for another 30 seconds, and remove from heat. Pour it over your cooked puff pastry sheet (or some oatmeal for a healthier spin!)
I meant to top mine with some chopped pecans, but I kinda forgot as soon as that plate hit my table 🙂
