Pattaya Beach | 2 Ingredient Cocktail

IMG_6067Hi, folks!ย  Happy Monday….?ย  Sorry I’ve been slow this past week, I was trying to focus my free time on some spring cleaning and all that getting-my-life-in-order stuff ๐Ÿ™‚

That’s as under control as it’s going to be.

To celebrate, a cocktail!ย  Woo hoo ๐Ÿ™‚

One of my favorite local Thai restaurants has a fantastic cocktail called Pattaya Beach. It’s fresh young coconut water with coconut (and I think pineapple) rum. It’s simple and heavenly and I looooove it.

So obviously I had to make my own. I don’t even know what else to say about this drink. It’s SO GOOD, so simple, and you should try it rightthisinstant.

serves 2
1 young Thai coconut (you’re just using the water from it, so scoop out that meat and use it! I used a little for a garnish)
2 oz coconut rum
optional garnishes: maraschino cherries, coconut meat

Shake everything together with ice in a martini shaker and drink up!ย  When adding a maraschino cherry to one glass, I somehow got a whole lot of the liquid from the jar in there, too, but that was great too ๐Ÿ™‚ย  both ways are fantastic!
