Fishless Filets w/Strawberry Salsa + Guac

Want a light dinner that comes together in no time that’s perfect for spring! This is it. I shared my quick dinner on last week’s WIAW but I wanted to get up a quick recipe because it was just SO good and satisfying.

In the time it took my fishless filets to cook up in my toaster oven, I had the strawberry salsa and guacamole made, a glass of wine poured, and dinner was served!

Just pop fishless filets (or your favorite veggie burger or faux meat – this would seriously go with almost everything!) in the toaster oven and set it up according to the package directions. While that cooks, mix up some easy guac and this strawberry salsa. The great part is that the salsa and the guac use all of the same ingredients – you just mix everything with mashed avocado for one, and mix up some diced strawberries with the rest.

serves 1
2 Gardein fishless filets
3 large strawberries
1/2 avocado
1 small jalapeno (I only used about 3/4 of a big one)
1/4 small red onion
2 limes
1/3 C cilantro
salt and pepper to taste

Pop the filets in your toaster oven (or normal oven, or on a dry skillet if you’re cooking them on the stovetop.) Dice your strawberries and throw them in a small bowl. Mash your avocado in a separate small bowl. Then mince the jalapeno, onion, and cilantro. Add half the mixture to your mashed avocado and half to the strawberries. Squeeze the juice of one lime into each bowl. Mix them up, season with salt and pepper. When your fishless filets are done, layer strawberry salsa underneath, top with the filets, and dollop your guacamole right on top!

If this dinner is a little too light for you, add some rice or quinoa (and maybe cut back the guac – that much is filling!) Or maybe heat up some black beans! Yum!
