It’s 92 degrees here today, and seriously feels like summer. Which means fruit-based desserts and frosty treats are about to take over my bread and cookie baking ways 🙂
First up is the perfect spring baked dessert: a simple guilt free berry cobbler from Neal Barnard’s book Food for Life. I absolutely love this cobbler – it’s so easy to switch up and customize. I wanted to use up some of the many bags of frozen fruit in my fridge, so I thawed a bunch of mixed berries, whipped up the really easy cobbler topping, and dessert’s ready in about an hour!
serves 6*
1 ½ C whole wheat pastry flour
1 C raw sugar
1 T baking powder
½ t salt
1 ½ C soymilk
1 t vanilla extract
4 C berries, thawed if using from frozen
Preheat oven to 350 degrees. Combine dry ingredients, then soy milk and vanilla extract. Spread berries and juice in bottom of dish, then pour batter on top. Bake for 45 minutes.
*Neal Barnard says this should be 12 servings. I wanted to base nutrition facts on a bigger serving since I know I for one would probably eat more than he recommends. Oops 😉
Try mixing it up by using any kind of fruit you like – frozen, fresh, canned, berries, stone fruit, apples. Add some herbs or spices, too! I plan to make some more fun versions this summer, but wanted to post the basic recipe so you see how amazing and simple it is.
