One Skillet Pasta

I’ve been wanting to try this for MONTHS!

It’s an awesome idea: throw your dry pasta, water, toppings, and sauce ingredients all in one large pot and cook it until the pasta cooks and everything’s all cozy and combined. One pot meal ๐Ÿ™‚

There are tons of recipes floating around, so I glanced at a bunch and decided I’d make up my own. Though mine is mostly adapted from this one from A Beautiful Mess (because they don’t steer us wrong!)

serves 6
1 box whole wheat angel hair pasta
1 28-oz can crushed tomatoes
1/2 C sun dried tomatoes (I used the dry ones in a bag, not packed in oil)
2 sprigs fresh basil plus more for garnish
1/4 C nutritional yeast
1 large shallot, finely minced
2 cloves garlic, finely minced
3 1/2 C low sodium vegetable broth
optional: add some cannellini beans if you want a bit of added protein!

Add all the ingredients to your largest skillet. If you don’t have a skillet big enough to hold the pasta, I recommend going with a shorter cut of pasta and throwing it in your largest saucepan.

Heat over medium-high and cook until your pasta is cooked through, stirring occasionally.

It’s ready when the pasta is tender and most of the liquid has been absorbed. You want to leave some liquid in for the sauce, though, so don’t worry about what’s left in there! It will be flavorful and awesome.

I was SO impressed with how much more flavor this pasta had than normal pasta with sauce poured on top. It was phenomenal. Totally making this again. ๐Ÿ™‚
