I made tacos recently and was so happy with how versatile, delicious, satisfying, and healthy they were. Plus fast. Plus something that can easily satisfy little vegan me and not-so-vegan boyfriend.
This is not a recipe at all, but some awesome simple tacos that came together quickly, and I totally recommend them.
This will not be anything special to those of you who routinely make tacos but since I really don’t, I was pretty happy to compile a little list of ideas for future taco-fixings.
mine included:
** crunchy corn taco shells (you can find baked ones now that aren’t fattening… that may not be new, but I can’t remember the last time I bought crunchy shells…)
** pinto beans
** saute of: onions, jalapeno, bell peppers
** soy chorizo
** avocado
** salsa
try adding:
** freshly grilled corn (it’s corn season!)
** roasted sweet potatoes (YUM!)
** sautéed mushrooms
** tempeh
** tofu… maybe Chipotle sofritas style!
** vegan sour cream
** guacamole
** roasted poblano peppers
** refried beans
** shredded jackfruit
** tomatoes
** whatever your favorite veggies are!
