It was a good weekend for this lazy woman’s beverages 😉
Yesterday I posted my lazy woman’s horchata which I’m completely obsessed with. Today it’s lazy woman’s vegan coffee creamer!
This is a basic and delicious recipe that you can adjust to replicate your favorite flavored creamers! This recipe came up the same way my horchata did – I kept looking at recipes for vegan coffee creamer and picked a shortcut that I thought would be awesome.
For this recipe, I used macadamia butter. If you can’t find it you have a couple options: 1. make it (grind macadamia nuts in your food processor or high-powered blender until creamy.) 2. use cashew butter.
I was excited for the macadamia butter because I wanted that creamy richness you get in coffee creamer and macadamias absolutely have that. Plus my local Sprouts Farmers Market has house-made macadamia butter, which just so happened to be on sale last week. But I think cashews would be fantastic, and a lot of the recipes I found used cashew crème as a base.
lazy woman’s vegan coffee creamer:
serves 18
approximately 1 oz. servings
2 C water
2 T macadamia butter
2 T maple syrup
1/2 t vanilla extract
Blend everything together!
And you’re done 🙂 If you don’t have a high-powered blender (and depending on the consistency of your macadamia/cashew butter), there might be some slight grittiness in this. It’s really not enough to bother me at all, but if it will bother you I’d strain this through cheesecloth or nut milk bags when you’re done.
Feel free to experiment adding some ingredients to try your favorite coffee creamer flavors at home! I’m planning to try a dash of hazelnut extract next time for hazelnut creamer!
