Here it is: root beer float flavored ice cream. In a root beer float.
Mind. blown.
I found this root beer float concentrate in the spice aisle a couple weeks ago. The list of ingredients is pretty darn good, and it smells downright amazing. There’s enough concentrate in there to make a TON of root beer. The best part is that I can control the type and quantity of sugar that goes in my root beer by using this concentrate, so I’m pretty happy about that. If I’m going to drink a sugary soda, it’s going to be root beer. This way I can drink it guiltlessly a little bit more often. 😉
I immediately knew this had to be an ice cream flavor. I mean, come. on!
for the ice cream:
yields 12 servings
2 cans full-fat coconut milk (*or try 3 C of soy milk or soy creamer)
2 T root beer concentrate
1/2 C fine sugar
Blend everything together. Chill in the fridge for a couple of hours. Then pour into ice cream machine and let ‘er rip according to manufacturer’s directions. Most machines will produce a slightly soft ice cream – you’ll probably want to put it in a freezer-safe tupperware for about an hour or two until it firms up more before making root beer floats.
A note on the ingredients: Using coconut milk did leave a slight coconut flavor in the ice cream, and required a lot of root beer concentrate to overpower that flavor. If you use a different kind of milk, I’d add the concentrate slowly so that you don’t use more than you really need.
for the root beer:
1/2 C sugar
1/2 C water
1 liter seltzer water, chilled
2 t root beer concentrate
Combine water and sugar in a small saucepan and heat over medium heat until the sugar has dissolved. Allow it to cool and combine all ingredients together.

: scoop ice cream into a glass. Pour your awesome home-made root beer on top. Damn it’s good.
