the recipe | Giada’s Three Cheese and Artichoke Calzones. I think I just about drooled when I saw Giada make these, and knew I just HAD to veganize them.

the substitutions | Lots of changes on this one to veganize it! Despite all the changes, I think it seems pretty true to her recipe. **1/2 C pecorino romano -> 1/4 C nutritional yeast ** 1/2 C whole milk ricotta -> 1/2 C vegan ricotta ** 1/3 C shredded fontina -> 1/3 C vegan mozzarella shreds ** purchased pizza dough -> my favorite no-rise pizza dough recipe ** egg white -> totally unnecessary. omitted.

the verdict | Loved them! They came together really easily and were creamy and delicious. That pizza dough is phenomenal and so simple. Just start the dough, fling some things in the food processor, roll these up, and pop them in the oven. While they baked, I cleaned up my very small mess (hello, food processor + one mixing bowl!) and made a little salad. I rolled my dough out into one giant circle instead of shaping all my calzones separately, so they looked a bit messy, but I didn’t mind. Definitely worth making again, the only change I’ll make next time is to not blend everything quite so much in the processor – some chunks of artichoke would have been nice.
