So it’s starting to sink in that it’s September. That’s crazy. I don’t really believe it. Like I said in my little goals post, I’m stoked. Really, I am. But this summer flew by in a weird phase of my life. Part of me is itching to wear boots and hats and bake things with too much pumpkin.

But until that comes, I’m going to try my hardest to enjoy the long days (which are already getting noticeably shorter!!! Booo 🙁 my poor food photography hates that….), the mild mornings and evenings, and soak up just a little more sun!

This weekend I made it a point to get outside for runs and walks and wine tasting and a trip to the park with the niece, and my favorite: eating on my beautiful new balcony! I whipped up an awesome tofu scramble over the weekend to help use up some bits and pieces of leftovers in my fridge, and it turned out awesome! New weekend tradition, I believe! Plus I can keep this up until the weather really turns… I’m thinking hot coffee or cocoa while wrapped in robes and blankets 🙂

The best part about this recipe is that the measurements (and even ingredients) are super flexible. As long as you have a decent backbone of tofu, stir in whatever’s in your fridge and mix it all up!

This was a great meal to have before a day of wine tasting! Plus the vast majority of the ingredients I threw in were leftovers from other meals. Fantastic!

chorizo quinoa scramble:

serves 2
1 T olive oil
2/3 C soy chorizo
6 oz tofu, crumbled
2 slices polenta, cubed
1/3 bell pepper, diced (I had just a small handful of two colors)
1/4 small onion, diced
1 C cooked quinoa
1 clove garlic, minced
1/4 C salsa
4 scallions, sliced

Heat olive oil over medium heat in a nonstick skillet. Add bell pepper and onion and sauté for about three minutes. Add tofu and chorizo and sauté for another couple minutes. Then throw in everything else except scallions and cook until everything is heated through, well combined, and you get just a few browned bits. Turn off heat, mix in scallions, and serve!
