Triple Coconut French Toast

All things coconut have arrived!!! On French toast 🙂

I really wanted French toast recently, so I whipped some up and topped it with my fantastic Nikki’s Vanilla Cake Batter Coconut Butter. It got all melty and amazing and the idea for uber-coconutty triple coconut French toast struck me.

Coconut milk. Coconut oil. Coconut butter.

The only other thing you need for this recipe is bread. I used my hearty oat + flax bread, and it was faaaaaaantastic!

Let’s get right to it!

serves 1
1 slice whole wheat French bread (or your favorite French toast bread!)
1/4 C light coconut milk
1 T coconut oil
1 T coconut butter
optional: maple syrup

Heat a nonstick skillet over medium heat. Dip the bread in the coconut milk, flipping it so it absorbs the milk. I stabbed my bread a few times with a fork to help open it up and make it absorb more of the coconut milk.

Add oil to the skillet and throw the toast on top! Let it cook for about two minutes per side until golden brown.

Flip it onto a plate and immediately top with coconut butter. Mine is getting a little firmer as the weather cools, and I have to flake it out of the jar. But get it on the toast while it’s warm and it will melt and turn incredibly delicious!

Add a little maple syrup too if you’re so inclined!
