TELL me you’ve had a Moscow mule! A few years ago, it seemed like bartenders were the only ones who knew what they were, and then they blew up! They’re everywhere now. It’s one of my favorite drinks – the warming ginger, fresh mint, and bubbles make for such a lovely satisfying drink.
Today I’m bringing you the Moscow Mule’s cousin, an apple cider mule.
I totally meant to get this awesome apple cider mule cocktail up yesterday for a perfect Friday happy hour drink. I had a fantastic day yesterday because I took a much-needed mental health day. I planned a productive day off blogging, exercising, working on my bed spread (I’ll be done TODAY!!!!) It was a very productive day, but sadly my gigantic checklist turned out to be rather unrealistic. 😉 totally normal for me…
It was still a lovely day, and the perfect way to spend the first official day of spring!!!
I hope you’re outside today and see some signs of spring wherever you are. Maybe you can celebrate with this awesome cocktail. It’s so ridiculously easy, but such a fun drink inspired by a Moscow Mule. Except today we’re sipping on a very light refreshing version made with apple cider and LOADS of fresh lime and mint.
- 1 bottle apple cider
- 1.5 ounces gin (vodka is great too if you prefer it!)
- juice of 2 limes
- handful mint leaves
- Mix everything together in your glass and serve with ice!

I am loving this version. It’s still just as light and refreshing as the classic mule, but with such a fun spring kick so we can welcome in the new season with a clink of our copper glasses 😉
