Helloooooo, easy chocolatey coconutty dessert! Fantastic no-bake chocolate coconut macaroons have arrived!
If you guys follow me on Instagram, you may have noticed I died and went to heaven when I got myself a bag of Lemon Pie Coco-Roons. They. were. awesome.
But that was a splurge with my Costco rewards check, and I’m not normally going to pay for those! I figured I could make something pretty similar at home using coconut flour or flakes or something of the sort.
So the other day I threw pretty much every coconut ingredient I had into my food processor along with some cocoa powder, and the result is pretty freaking awesome 🙂
Doesn’t get much easier than these no-bake chocolate coconut macaroons, but they are incredibly rich and satisfying. They’re actually not very sweet, though for me they do the trick. If you want yours sweeter, go right ahead and add some extra maple syrup for fantastic flavor and a softer cookie. The best part is that they actually have some pretty significant nutritional value, and they’re completely packed with fiber to help keep you full so you don’t go reaching for too many sweets.
- 1/2 C coconut butter
- 1/2 C coconut flour
- 1 C flaked coconut
- 3 T cocoa powder
- 1 t vanilla extract
- 3 T coconut oil
- 2 T semi-sweet (or dark) chocolate chips
- Blend everything except chocolate chips together in a food processor. Make sure it clumps together easily – the coconut flour will absorb a lot of moisture, so you may want to add more coconut oil (it will depend on how soft your coconut butter is too.) Shape into 8 balls and lay on a piece of waxed paper.
- Melt chocolate chips and drizzle over the macaroons. You can leave them out to set or throw them in the fridge to speed them up. Store them in the fridge!
