Ahhhhh, return of one of my absolute favorite spring/summer meals! Summer rolls are just SO much fun. It’s an awesome way to pack a little finger food full of healthy raw crunchy veggies, your favorite noodles, maybe some tofu, and experiment with all kinds of dipping sauces 🙂 These avocado soba noodle summer rolls are probably the most substantial and satisfying ones I’ve ever made.
I am just not a huge fan of raw veggies. It can be a serious chore to eat them sometimes, and I always have to find a way to “fun” them up. 😉
These rolls are the PERFECT way to do that. Avocado, soba noodles, and a delightful spicy peanut dipping sauce?! Feels like a pretty fun, decadent, and completely satisfying meal actually. But it’s packed with healthy fats, raw veggies, and savory baked tofu. Just one of these huge rolls was plenty of dinner for me!

- 1 C cooked soba noodles
- 1 t toasted sesame oil
- 1 block baked teriyaki tofu (I used Trader Joe’s)
- 1/2 bell pepper
- 4 big butter lettuce leaves
- 1 1/2 avocado, thinly sliced
- cilantro
- 4 brown rice paper wraps
- 3 T creamy peanut butter
- 1 T seasoned rice vinegar
- 1 t sriracha
- 2 t honey
- 2 T mayonnaise
- 2 t sriracha
- Cook and cool the soba noodles, and toss them with the teaspoon of sesame oil to keep them from sticking together, and give them a little flavor.
- Soak the rice paper wraps one by one in warm water until soft. Lay on a damp towel, layer the thinly sliced avocado in the center of the roll. Top with the peppers, tofu, a big pile of soba noodles, and then top with a butter lettuce leaf. Fold the sides in and roll it up like you’re making a burrito. The sticky rice paper will seal it all together.
- Whisk all ingredients for each sauce together.
