Herrrooooo, happy hump day lovelies!
How’s your week so far?
Mine is going by pretty quickly! Yet still waiting on the weekend… I started the week a bit sleep deprived and can’t seem to catch up. Which always means I feel like I need a whole weekend day to get my adulting done because I’m not so hot at it during the week. 😉
Though I am super excited because I think one of the big culprits for sleep issues lately is my mattress, and I have a new one arriving todaaaayyyyyy! I fully expect it to get delivered to my apartment’s office which means I have to battle to find time to pick it up since they’re only open when I’m gone. BUT by the latest, we’ll have a new mattress Friday night! Hoorah!!! (You know you’re old when you’re giddy and excited for a new mattress…)
Anyhow! Super simple recipe alert! This strawberry pina colada smoothie is DIVINE! Easy and tropical, which I LOVE. The secret is frozen coconut milk ice cubes! Just pour coconut milk in an ice cube tray and freeze. Oh man, they make for some yummy frosty drinks 😉
The other “secret” is coconut flavored protein powder! It’s excellent and my FAVE. Though I made this with vanilla too, and it’s great. If you to reinforce the coconut flavor but don’t have coconut protein powder, you can add a tiny splash of coconut extract!
- 6 coconut milk ice cubes
- 1/2 C frozen strawberries
- 3/4 C pineapple juice
- 1 scoop coconut or vanilla protein powder
- 1/4 C vanilla almond milk
- Blend everything together and enjoy!
