A healthy recipe for peanut butter protein blondies that satisfies a sweet tooth with a low-sugar, gluten-free, high-protein snack.

You guys KNOW I love treats like this. They work for breakfast, mid-afternoon sweet tooth fits, or dessert.
That’s all the rambling I’m going to put you through today 😉 I’m sleeeeeeepy. So here are some yummy pictures and my super awesome peanut butter protein blondies recipe. See you manana!
- 1 can chickpeas
- 1 C almond flour
- 2 eggs
- 1 T vanilla
- 1/2 t salt
- 1/2 C peanut butter
- 1/3 C brown sugar
- Preheat oven to 325 degrees.
- Combine all ingredients in food processor and blend until very smooth. Spread dough evenly in an 8×8 baking dish that has been sprayed with cooking spray. Bake for 16-18 minutes, until the center feels the same consistency as the edges.
- This is not very sweet at all (which is part of what makes it breakfast and snack appropriate!) If you want it sweeter for dessert, double the sugar!
