My pineapple coconut lime spritzer is a light and refreshing cocktail with the flavors of a pina colada but a much lighter feel.
Yes, I KNOW it’s October. (WHAT.) And I’m over here posting a coconut cocktail.
But in Sac it stays hot well into fall (often until the end of October… 🙁 ) and I didn’t feel like I got enough good summer recipes up, so I’m going to keep posting them!
Here’s a little restaurant-remake for y’all today. I had a STELLAR coconut cocktail at Fat City Cafe when my mom and sister and I went to a paint nite. (Considering the service was NOT stellar and I didn’t wind up getting food all night, I took extra joy in a yummy cocktail.) I LOVE a good coconut cocktail, but most of mine are very pina colada-ish or super sweet and strong. Which of course I love. But the cocktail I had was surprisingly fresh and light.
So that’s what I’m going for today with this pineapple coconut lime spritzer. Super similar flavors as a pina colada, but somehow much fresher and lighter. (Sparkling water helps, obvi.)
It’s simple, light, and fruity.
And sure it’s not very seasonal recipe, but COME ON. When is coconut not delightful??
Though I thought some black rimming sugar with green lime zest gave it a bit of a Halloween-ish feel, eh? Totally unintentional, but I’m not sorry.
- 1/4 C Malibu coconut rum
- 1/4 C pineapple juice
- 1 T lime juice
- 2 T coconut cream (this kind)
- sugar for rimming glasses
- zest of 1 lime
- In a martini shaker filled with ice, shake rum, pineapple juice, lime juice, and coconut cream.
- Use lime wedges (or honey! works super well) to coat edges of your glasses. Combine rimming sugar with lime zest and rim your glasses.
- Pour in your cocktail.
