Fear not the baked potato! Poor potatoes get such a bad rap! Probably because people usually eat them in the form of french fries? But a small or medium baked potato topped with sauteed mushrooms, a healthy mushroom gravy, and paired with a salad is a wonderful and delicious meal. And not a guilty meal!
A couple facts about potatoes that aren’t told often enough:
they’re fairly low calorie and very low in fat (the key to this is that changes when they’re cooked in oil or butter, or covered in cheese . . . hmmm)
they’re actually full of some healthy stuff, like vitamin B6, vitamin C, potassium (even more than bananas!), and fiber
So here’s an easy way to make a baked potato into a hearty & healthy meal!
recipe:
serves 2
2 medium sized baking potatoes (Russets)
1 t olive oil
1 T Earth Balance 1 medium shallot, finely diced
1 pint cremini mushrooms, sliced or quartered
1 clove garlic, finely minced
1 T fresh rosemary, finely minced
1/2 t truffle oil
small handfull dried mushrooms (any variety you can find – I’m using a mix)
1 C vegetable stock
1 T arrowroot
chives for garnish
Poke a bunch of holes in the potatoes with a fork. Rub potatoes with a little bit of olive oil. Then bake in a 400 degree oven for about 40 minutes, until the skins look brown(er) and crispy.
While potatoes are baking, you can make your sauteed mushrooms. Heat a pan over medium heat; add Earth Balance. Saute shallot and mushrooms until lightly browned. Then add garlic and rosemary until garlic is soft. Turn off heat, mix in truffle oil.
Now it’s gravy time! Pour vegetable stock over dried mushrooms and heat in a small saucepan until the mushrooms are soft (the picture below is what they should look like). Puree mushrooms and stock together. Then mix arrowroot with a tablespoon of water in a small dish, and slowly whisk into the mushroom puree. Stir until it’s thickened.
