Who else completely loves Kodiak cakes? If you have no idea what I’m talking about, it’s a super-high-protein pancake and waffle mix. And it’s delightful. Plus the mix is surprisingly healthy!
Well, Kodiak Cakes also makes “Flapjacks on the Go,” which are little cups of mix you can add water to and microwave wherever you are. I love them, but they cost a few dollars apiece. That’s just way too much for a regular breakfast in my books. They also have a bit more sugar than I’d like, palm oil (which I try to avoid for political reasons), and a few weird ingredients. So I made up my own version that is so easy! The base is still the original whole grain Kodiak Cake mix. Just add a few ingredients, separate into plastic containers, and you can prep a week’s worth of delicious breakfasts in no time.
Plus, it’s one of those recipes where you can make the base and adjust as much as you like. Add your favorite dried fruit or spices. Grab the gluten-free Kodiak cake mix for a gluten-free version. Cut back on the sugar. Pack a little fruit to throw on top. The store-bought version has maple flakes in it, which I just so happen to have and they make an awesome addition for dried maple flavor! But I cut them out here because they’re hard to find. (here’s a link to some with good reviews, but mine came from Williams Sonoma, who no longer carries them! Boo.)
I snagged this yummy berry syrup from the same brand (at COSTCO – by the way, that’s the best place to buy the mix too) and it is SO good but way healthier than regular syrup.

- 3/4 C oats
- 1 1/2 C kodiak cake mix
- 1 T baking powder
- 1/2 C brown sugar
- Grind the oats finely in a spice grinder or food processor. Then whisk all ingredients together. Divide into five servings.
- That’s literally it.
- When you’re ready to microwave your travel muffin, add 1/4 C water to the mixture and microwave 45 seconds on high.
