Mango Cherry Lassi

I may have had a small stroke this week.  I was reaaaallly excited for the Mango Guava Lassi I’d planned.  But then I ate the vanilla soy yogurt I bought for it and forgot to buy the guava juice in the first place!

I just wasn’t in the mood for another run to the store.  So I’m making do with what I have, and that turned out perfectly
 
Not only do mango and cherry go surprisingly well together, but I have half a Costco bag of cherries in my freezer! 

 

Yaaaay using up even more of the vast expanse of frozen fruit in my freezer. 
 
Seriously.  Half my freezer is fruit or juice or leftover smoothies.  And I have a really big freezer.
 
Plus I did have a cherry yogurt!  Double score.
 
You’re really never going to hear me say things like “it was meant to be” or “things happen for a reason.”  That’s just not the way my brain works.  But I am surprised at how nicely things fell in place for this recipe . . .
 
 
So I introduce you to the Mango Cherry Lassi, a happy remedy to my mistakes 🙂
 
Oh yeah, and a healthier version of a lassi! 
 
serves 2
1 1/2 C frozen mango chunks
1/2 C frozen cherries
1 6-oz cherry yogurt (I used soy, but I’ve had some incredibly good coconut-milk and almond-milk based yogurts recently that would probably work just as well)
1 11-oz container mango-flavored coconut water
1/4 t ground cardamom
1/8 t ground ginger
 
Blend. 
 
Mmmmmmmm!
