Watermelon Superfood Slushie


Remember ICEEs??? 

They were one of my all-time favorite childhood summer treats.  

Alright . . . I shouldn’t speak of them in the past-tense.  I definitely have at least one every summer still.

But I’ve finally found a healthy alternative.  Maybe now ICEEs are a thing of the past . . . 

Thanks to the brilliant idea I saw on Healthy. Happy. Life., I’ve been freezing melon lately.  I’ve tried several kinds now – watermelon, cantaloupe, and canary melon.  All delicious!   But the thing about freezing melon is that it results in a very slushy icy consistency – much more watery than your typical smoothie. 

Verrryyy reminiscent of an ICEE!!! 

Happiness. 

So here’s a delicious creation.  Instead of having an ICEE full of sugar and artificial food coloring, enjoy my new Watermelon Superfood Slushie with fresh fruit and superfood juices! 

Three ingredients! 

serves 2
2 C frozen seedless watermelon cubes
1 C pomegranate juice
1/2 C acai juice

You can definitely mix and match your favorite melon and juices – I love the flavors of pomegranate and acai juice combined – tart pomegranate and sweet acai berry are wonderful together.  Plus, who can argue with that powerhouse of antioxidants in what tastes like dessert?! 

To make: blend everything together. 

Ir-re-sis-ti-ble.
