Chili Garlic Onions & Snow Peas

I’ve had a hectic last couple weeks.  I moved – and it was a nightmare (yes, even more so than usual – but I plan to whine about that on an upcoming post!)

I certainly had my share of takeout recently so I could focus on moving and spare myself the cooking time (not to mention my poor kitchen was in boxes!  Sad.)  Then came this past super-indulgent weekend I told you about yesterday!  All that unhealthy eating is taking its toll on me, and I need a speedy and healthy home-cooked meal for a change.


A simple saute of onions and snow peas in store-bought sauces makes a fantastic meal that only requires a few minutes of prep.

serves 1 
1 small onion, sliced diced, quartered – whatever you want! 
1 C snow peas
2 t coconut oil (any vegetable oil works)
1 T chili garlic sauce
1 T sweet chile sauce
1/4 C + 1 T water

Heat oil in a large skillet over medium heat.  Add the onions and snow peas and cook stirring occasionally until the edges are slightly browned.  Add the 1/4 C water, cover the skillet, and let the veggies steam for about 10 minutes (for large quartered pieces – less if you cut your onion smaller) or until soft.  Meanwhile, mix the other tablespoon water and the two sauces together.  Then stir in the sweet chili garlic sauce just until your vegetables are coated and the sauce is warmed through! 


I heated up a store-bought scallion pancake, which I raved about in my Asian Market Guide post, and that was dinner.  A fast and easy dinner so I can get back to unpacking!  

That was even faster (and much healthier) than running to Chinese takeout.  And I really need any extra time I can find – I showed you what my apartment looked like yesterday (and that was a pretty harmless area . . . ahhh!)
