Potatoes at their best. Yams plus mixed baby potatoes. Lightly mashed. Lightly fried. In truffle oil and garlic avocado oil. I’m pretty happy with myself.
I was excited about this idea when I thought of it, but it turned out way better than I anticipated! I made it at the end of the day when I was not hungry at all, and I was sooo sad. Come on, stomach – hurry up and digest so I can eat more of this!
serves 2
1 yam or sweet potato, cubed
1 C halved baby potatoes
1 T truffle oil
1 T garlic flavored oil (I just bought this avocado oil at a winery in Amador County this weekend! Yum!)
1/2 t salt (I used Herbamare – a seasoned salt)
black pepper to taste – but I recommend being generous with it
Put all potatoes in a pot and cover with cold water. Note: you can peel the potatoes if you want to, but I love the mixed textures of peels, creamy middles, and then the crispy sides that I fried! Bring to a boil and cook until the potatoes fall apart when you spear them with a fork.
Drain potatoes, and lightly mash. I just used a dinner fork and press each piece of potato once.
Heat a large skillet over medium-high heat. Add the avocado oil (use this one first because it has a higher smoke point than the truffle oil so you can cook it for longer, and heat it up in the pan before you add the potatoes without a problem!) Then pour the potatoes in. Just flatten them lightly in the pan and leave them alone for several minutes. You want to form a crust on the bottom of the potatoes.
Then flip the potatoes, add the truffle oil while you’re flipping, and cook for another several minutes. Season with salt and pepper.
Steaming hot! Each bite is something new – yams, garlic flavor, crispy fried bites, truffle oil, baby potatoes, creamy bites – all in the same dish! Since I really don’t stir this at all, you get little pockets of flavor and texture. It’s pretty fun.
