Green Tropical Coconut Smoothie

Okay, now it’s time for one of those green-juice-drinking healthy resolution recipes.  One of my resolutions is to drink green juice more!  Lots more.  

So the other day I juiced a bag of greens with a few stalks of celery.  A very plain but shockingly green juice.  I mixed the first serving of it with acai juice (um, delicious!)  Now I’m using the second half of that juice to green up a yummy smoothie!

Green Juice:
yields 2 servings
1 bag greens of choice (I used Power of the Greens from Trader Joe’s)
2 celery stalks
To make: juice all ingredients.  If you’re just making the juice and not blending it into a smoothie, you should add an apple or other piece of fruit to sweeten it up. 


Smoothie:
serves 1
1/2 recipe of green juice above
meat from one fresh young coconut
1 C frozen pineapple (mango would be awesome too)
1/4 C coconut water
optional: 1 T chia seeds

To make: blend everything.
