Attention all berry lovers! This is a berry superfood–filled breakfast. I think you’ll love it.
Quickie post today – got the recipes for you right away. No need to read my chatter 🙂
oatmeal:
serves 1
1 C unsweetened vanilla almond milk
1/2 C rolled oats
3 T dried blueberries
1 T maple syrup
optional: add goji berries too! I wanted to but didn’t realize I was out 🙁
To make: heat almond milk in a small saucepan over medium heat. When simmering, add oats. Cook, stirring occasionally, for about 8-10 minutes, until thoroughly cooked. Then add blueberries (and goji berries if you’re using them), and cook for another minute to allow the berries to plump up – add them earlier if you want them really rehydrated. Stir in maple syrup or pour on top. I add an extra splash of almond milk to the top too.
smoothie:
serves 1
1 C mixed frozen berries
1/2 C acai juice
To make: blend.
