Super Green Mojito Smoothie

Please meet one of the most delicious green smoothies ever! 

A creamy, fruity, delicious smoothie with that zingy lime + mint flavor of a mojito!

I just wish I’d packed both of them to take to work with me today.  Sad.


serves 2
3 C baby spinach leaves
1 bunch fresh mint
2 C unsweetened soy milk
1 T pure maple syrup
zest + juice of 2 limes
1 1/2 C frozen honey dew melon
sugar to rim the glass (optional)

Put spinach, mint, soy milk, and maple syrup in blender and blend until the spinach is really fine and smooth. 

Set aside some of the lime zest to rim your glass if you want!  But who doesn’t want that?

Then add lime zest, juice, and frozen honey dew cubes, and blend until smooth.  Take the end of a lime that you cut off, wipe it on the rims of your glasses, and dip in sugar + lime zest.  Then pour in your smoothie! 

It is so delicious!  

Of course, as soon as I started taking pictures I realized that this was kind of destined to be a St. Patrick’s Day post.  But it was too good to put off until then!  So watch for a spiked version of this next month, cause I’m definitely going to try that.  🙂

    But honey is produced by bees, so it’s not vegan :/

    I believe the recipe calls for Honey Dew Melon, which is a melon. No honey
