Time for the spring and summer smoothies to start coming back! This weekend was an amazing moment of summer – I fit in a bike ride, kayak trip, outdoor dive bar, and a couple little walks. And a splotchy ridiculous sunburn (stupid spray-on sunscreen!), dehydration, and overall forgetting how to prepare for such fun activities.
Of course, the clouds are making their way back this morning for some April showers, but I’ve seen a glimpse of the warm weather season and I’m excited!
I had a crazy craving for papaya, so Sunday I walked down to my grocery store and found one. Came back to whip up an afternoon smoothie, and it was so good and refreshing.
serves 2
1 C papaya, cubed
1 C ice
1 T ground flax seed
1 frozen banana
1 C unsweetened vanilla almond milk
1 T pure maple syrup
zest + juice of one lime
optional: 2 C spinach (I did half without, then added 1 C spinach to the other half)
Blend everything together!
Drink up.

**Adding spinach means a few extra calories, a little more fiber, and lots more vitamins and minerals!
