Happy July 1st, folks!
I planned to do my final recap of my June Salad-a-Day Challenge today and post a salad recipe. But I got home hot and thirsty and in need of a pre-dinner snack, so I whipped up this smoothie (the third day in a row I’ve made it) and decided the hot weather calls for this. It’s just so good.
Matcha tea. Coconut milk. Hidden greens. The perfect blended slushie drink when you just want to down all the smoothies, ice creams, juice, coconut water, frappuccinos you can get your hands on. But this keeps it to 100 calories (okay, it’s a teeny bit more, but who cares?!)
I want this at all times of the day. Today it’s a light snack. Pair it with some avocado toast and it’s breakfast.
Let’s just get to it!
serves 1
1 C Silk vanilla coconut milk (the kind in a carton, not a can)
1 C spinach
1 C ice*
1/2 t matcha tea powder
1 t vanilla extract
*you could add coconut water ice cubes to make this extra filling and hydrating, and you’ll still be well under 200 calories
If you have a regular blender, blend the spinach with the milk first until it’s fully incorporated. Then add the rest of the ingredients and blend until smooth.
If you have a high-powered blender, just add everything at the same time and blend away!
