Avocado, Chorizo & Black Bean Quesadillas

Hi internet friends!  I hope you all had a fantastic holiday (and hopefully long) weekend.  I felt so spoiled to get a four-day weekend at my new job the first week, especially after taking so few days off the past year. 

It. was. bliss. 

Mostly I bummed around my apartment and a little bit around town.  I got stuff done, watched obscene amounts of TV (caught up on Dexter since the new season just started!), hung out with friends and the boyfriend, and cooked!  Sorry I didn’t make time to post this weekend, but I made a few yummy meals that I managed to snap some pics of before devouring them.

What did you guys do this weekend?  How do you normally spend some extra time off?

Here’s a lunch I fixed for myself and Preston over the weekend.  Simple speedy quesadillas with just a few ingredients.  (Have you noticed I’ve been into recipes with as few ingredients as possible lately?  I am really enjoying it.) 


serves 2*
1 avocado
2 servings soy chorizo
1 C black beans
2 whole wheat tortillas
1 t avocado oil
* These were pretty giant servings, you could easily cut them down a bit. 

Blend avocado, chorizo, and beans in a food processor.  Spread half of the mixture onto half of a tortilla.  Fold the other half of the tortilla over, and saute it in 1/2 t oil in a skillet over medium-high heat until crispy! Repeat with the other one. 

Seriously.  How fast is that?! 

Nutrition facts per serving: Calories: 504; Calories from Fat: 229; Total Fat: 25.5g; Saturated Fat: 2.8g; Sodium: 581mg; Total Carbohydrates: 55.9g; Dietary Fiber: 17.8g; Sugars: 3.4g; Protein: 20.0g

    Those look delish and I love the fact there’s just a few ingredients. Just curious – how do you figure out your nutrition facts? I’d like know how.

    Karen, I calculate the nutrition facts using two websites: caloriecount.about.com, which is awesome because you can paste an entire recipe and the number of servings into their form and it calculates the nutrition facts for you. The problem with that website is it’s not always the most accurate, so I always (1) double check ingredients that I’m less familiar with and (2) watch for numbers that I know are errors, and then I plug those into fatsecret.com and make sure I get accurate numbers.
