Blueberry Muffin Protein Smoothie

A few days ago, I posted a picture of this smoothie on Instagram – if you follow me, you probably noticed how damn excited I was.

This was an accidental creation that I am super proud of.  It was one of those mornings when I was running really late and wanted to make a fast smoothie to take to work with me.  I didn’t have time to blend a multi-step and many-ingredient green smoothie, so I threw protein powder, blueberries, and almond milk in a blender and that was it.  And it was amazing

It tastes just like a blueberry muffin!  The vanilla protein powder adds just the right amount of sweetness and richness. 

serves 1
1/2 C frozen blueberries
1/2 C unsweetened vanilla almond milk
1 scoop vegan vanilla protein powder
optional: dash of lemon extract or lemon juice for a lemon blueberry muffin smoothie! YUM!!!

Blend away!
