Szechuan “Beef” Stir Fry

Yet another quick lunch fix that turned out so well I had to post!

This weekend I tested out Gardein’s new Szechuan Beef Strips for my lunch and they were delicious.  I am really trying to cut down on processed foods and eat a healthy whole foods-based diet, but my absolute favorite processed goodies are these quick frozen dishes.  

This was a fast, flavorful meal when all I really wanted was greasy Chinese food.  Love that.

I also love love love the sauce that comes with this packet.  It is fantastic.

serves 3
1/2 onion, sliced
1 C sugar snap peas
1 bell pepper, sliced (I used half a red and half a yellow for extra prettiness)
1 package Gardein Szechuan Beef Strips
1 T avocado oil

Heat 2 teaspoons oil in a large skillet over medium heat and cook the “beef” strips until heated through and crispy on the outside.  

Then crank the heat up on the skillet, add the last 1 teaspoon oil, and throw all the veggies.  Cook a few minutes until the veggies are softened.  Add the “beef” strips back into the pan and add the sauce packet. 

I piled mine on some chow mein noodles.  Rice or soba noodles would be perfect, or even try throwing this goodness on a salad!

    Where did you buy the Gardein' strips?

    I really love cooking food especially when I'm in a bad mood because it always making my day. And I think this recipe would give me a nice food and mood today. I will definitely try this.
