Seriously, over a week without posting food was weird, I missed you guys! I really loved working on redesigning my blog and learning some completely new-to-me things. I absolutely intend to keep working on it, and I’m sure you’ll see gradual changes for a long time to come.
But now that the redesign is presentable, it is seriously time to get back to the food!
Super duper simple recipe ahead! This is one of my all-time favorite quick snacks, especially for when I’m trying to get back in shape and keep my intake for the day in check. It’s satisfying and flavorful, and should tide you over when you get those afternoon munchies!
I’ve been eating this for YEARS, and it’s something that I always come back to.
So let’s get right to it! Here’s the recipe:
serves 1
1/2 cucumber, peeled and thinly sliced
1 T rice vinegar (you can use seasoned rice vinegar, or sub for mirin)
1 1/2 t honey (you can sub with agave or just dissolve some sugar )
Whisk vinegar and honey together in a small dish. Toss cucumbers in! That’s it 🙂 You can also top with sesame seeds for a little pretty garnish and extra bit of staying power!
