Layered Strawberry Coconut Smoothie

Hey everybody! How was your weekend?  Do anything to celebrate St. Patrick’s Day?  I didn’t really do anything, though yesterday was awesome for a totally un-holiday-related reason: I took the day off work.  Not for any reason at all, just because I needed a little breather, a day off, a personal day.

It. was. amazing.  I did a ton of spring cleaning, some crafting, cleaned my patio and got it ready for the spring!  I took a nice long walk with my sweet friend Maria, and I started a two-month trial of Hulu Plus 🙂  all in all, a fantastic day!

It felt like spring break.  Wish I could have taken a whole week for such a break, but one day is enough, and it was much appreciated.  I sure would love it if I could do that once a month, it’s amazing how productive and happy I felt at home, and it makes the work-week feel short and much better!  Maybe once every other month will be doable…. we’ll see.

Anyway, on to a recipe! I made this great super-creamy and rich smoothie this weekend and I just loved it.  Can’t beat strawberry and coconut.

serves 2
2/3 C young Thai coconut meat (I bought mine frozen and used it mostly defrosted)
1/2 C ice
1/2 C light coconut milk
1/2 C frozen strawberries
optional: a couple tablespoons of almond milk or other non-dairy milk

Blend coconut meat, ice and coconut milk together until smooth. Pour half of it into the bottom of your serving glasses. Then add the strawberries and blend until smooth (you may need to add some non-dairy milk to help it blend smoothly.)  Layer up your two smoothies!

For some reason, I felt very strongly that the strawberry MUST be at the bottom, but the coconut was thicker so it would have made a lot more sense to put it at the bottom. After I layered it and took some pics, I slurped down some smoothie and poured what was left in my blender right in. Definitely works better to have the strawberry on top of the coconut 😉
