Happy happy Friiiiiiiiday!
Have you ever tried one of those bottled vanilla chai protein drinks? There are a few out there, but I think the Bolthouse Farms one is probably most widely circulated. They are sooo creamy and yummy, full of vanilla goodness with a subtle chai flavor.
Well here it is in chia pudding form! Chai chia chai chia! Say that ten times fast! Had to cross that off because I obviously had to try saying that ten times fast and it’s actually easy. (Are you saying it out loud now?!) Vegan breakfast battle cry!
Alright, this yummy pudding is making me weird and giddy. On to the recipe!
serves 1
1/4 C chia seeds
1 C unsweetened vanilla almond milk
1 scoop (1/2 serving) vegan vanilla protein powder (mine is TJ’s soy)
1 chai tea bag
1 T maple syrup
Microwave (or heat on the stove if you’re anti-microwave or just fancier than me) the almond milk for two minutes until warm. Steep the chai tea bag in the warm almond milk for three minutes (five if it’s a rooibos or green chai tea – yes, those both exist, and they are AWESOME.) Allow to cool for a few more minutes. Mix everything else together very well (maybe even throw it in the blender if your protein powder is on the clumpier/chalkier side.) Refrigerate overnight.
You wake up to a sweet, protein-packed fantastic breakfast.
