I promised a more elaborate fishless filet recipe when I did my product review and not-really-a-recipe. So here it is!
DAMN was it good. I adapted Giada De Laurentiis’s recipe to make a sweet and savory vegan dinner that was drool-worthy. Like, for reals. Like, the kind of meal that I’ll probably have to repeat for dinner tonight because it was just too good to not have twice in one week.
Straight to the food, I can’t wait anymore!
serves 1
1 pineapple round
1/2 t brown sugar
1/2 t vegetable oil of choice
2 Gardein Fishless Filets
1/2 avocado
1 scallion, finely chopped
juice of 1/2 lime
1/2 C cooked forbidden black rice (or your choice of grain!)
optional garnishes: scallions and harissa powder
Pop the fishless filets on a cooking sprayed baking sheet and bake according to the package directions! Meanwhile, heat a large nonstick skillet over medium heat and add the oil. Blot the pineapple slice dry a bit and then using your fingers spread the brown sugar all over it as well as you can. Cook the pineapple for about 2-3 minutes per side until golden brown.
Mas up the avocado with lime juice, scallion, and salt and pepper to taste.
Layer your rice, pineapple, some avocado creme, the fishless filets, and the last of the creme. Garnish with scallions and ground harissa if you like!
