Seriously, buffalo. soy curl. pizza. It’s SO good. It’s so simple! I am totally in love.
Preston and I devoured the first one we made last week and already made a second the other day. (Photos from each of them, that’s why they look different…)
I bought this awesome Wing Time buffalo sauce recently from Nugget Market, and have just been pouring it over unexciting veggies or veggie burgers lately. Which is wonderful. This sauce + roasted yams + a veggie burger is a really good meal.
But it feels like a thrown-together meal that doesn’t really do this sauce justice. I needed to make a dinner that really focused on how freaking good this spicy buffalo deliciousness in a bottle is.
Pizza.
It’s just the best. Soy curls, onions, bell peppers. Damn good. So damn good.
serves 4
(or serves one Leslie + one Preston, there were no leftover survivors from these pizzas!)
1 store bought whole wheat pizza dough
1/4 C buffalo wing sauce
1 1/2 t avocado oil
1/2 red bell pepper, diced
1/2 red onion, diced
2 cloves garlic, thinly sliced
1/2 C soy curls, rehydrated
2 T sweet chile sauce
1 t vegan Worcestershire sauce
3/4 C vegan mozzarella
Preheat oven to 450 degrees. Roll out pizza dough. Meanwhile, sauté bell pepper, onion, and garlic in oil until they smell up your kitchen oh-so-well (about 5 minutes.) Toss rehydrated soy curls in sweet chile sauce and Worcestershire sauce.
Spread buffalo wing sauce over dough, then add about 1/2 C of the cheese. Top with bell pepper mixture and soy curls, then add the remaining 1/4 C of cheese. Bake until gooey and bubbling, about 15-20 minutes.
This is messy, so grab a fork and a whole lotta napkins, and dig in!
And just check out the fiber and protein in this pizza! Nothing wrong with that! 🙂
