Sorry for the lack of posts lately. I’m in the process of moving, and spent a good chunk of time figuring out how to make some posts out of food I need to use up, kept just the bare minimum kitchen tools out, worked out a sparse but interesting posting schedule, and you know what? It’s just too overwhelming to follow through. Posts will be slow for the rest of the week, and likely through next week too. I need to focus on moving!
I did manage to make an awesome peach smoothie on Monday. I had the day off and was organizing the dregs of my belongings in my apartment. It was a HOT day and all my window coverings are packed away already, so I made this as an afternoon cool-down treat, and it was fantastic. Four ingredients, simple and delicious taste. It really tasted more like a milkshake than a smoothie. Can’t complain about that!
serves 1
3/4 C frozen peaches
1/2 frozen banana
1/2 C vanilla soy milk
1/2 C peach juice
Blend everything together really well!
It’s rich and creamy with a light but great flavor. I can tell this would be a great smoothie to sneak some spinach into, I plan to use up the rest of my frozen peaches that way and get some greens in my less-than-ideal moving diet that way. 🙂
