Guys, I barbecued artichokes!!! It’s official, my world is complete 🙂

There was a restaurant in Pasadena that I loved that served a wonderful grilled artichoke appetizer. I wanted to remake it a couple years ago, but without a grill blackened artichokes were the closest I could get (and they’re seriously awesome.)

But that smoky flavor you can only get from an actual grill is incredible, and I’m stoked to have that!

A few weeks ago a friend from high school who moved to Pasadena after I left told me that she had that incredible grilled artichoke that I have been missing, and I decided to rush out and make it happen at home. Finally. The real grilled way!

It’s really the same procedure as the blackened artichoke but you throw it on the grill.

serves 1 (as half a dinner… I ate mine with a little bit of boxed Earth Balance mac ‘n’ cheese!)
serves 2 (as appetizer)

1 large artichoke, steamed or boiled until soft
2 t oil of choice (spruce it up with some flavored olive oils!!!)
1 t seasoning of choice

You can tell this is not much of a recipe, and you can change it up all you want! I used sun dried tomato flavored olive oil and Spike seasoning for the one in the picture, but between oil and seasoning combinations you can turn this into anything you want! I totally recommend you play around and use your favorite ingredients.

Cut artichoke in half and drizzle oil all over, focusing on the cut side (but get in between the leaves too!) Sprinkle seasoning in between the leaves and on the cut side too. Heat barbecue to low-medium heat. Place artichoke on grill cut side down, close the ‘cue and cook for about 10 minutes.

Delish!!! I could eat them everysingleday!
