the recipe | Rachael Ray’s Sausage + Butternut Riggies. I made the first of my list of Rachael Ray recipes to conquer! This was one of those recipes that had me absolutely drooling while I watched her cook. I could not wait to make it!
the substitutions | **frozen squash –> I roasted my own from a whole squash **sausage –> Tofurkey Italian sausage **butter –> Earth Balance **milk –> soy milk **cheese –> Daiya (and I cut it WAY down. I used half a wedge of cheddar.)
the verdict | Fantastic. It was easy, filling, delicious, and healthy. I’ll definitely make it again (I think this week with my leftover butternut squash…) but next time I’ll add a little heat.
