I know I have promised more videos for WAY too long and told you I’ve been working on some. Well, I FINALLY have one up for you! A meal prep video with a lunch recipe (salmon, vegetarian, AND pork versions of the same lunch) and protein muffins. Plus bonus CUPCAKES.
I have actually filmed and deleted a bunch of videos in the last few months. I wanted to bring more video content to the blog, but higher quality than the filmed-on-my-phone-and-not-edited-at-all style that I used last time I posted videos 😉 So I learned a few new editing tricks and put a little extra time in! It’s got a few hiccups but we’re only moving up from here! Please please feel free to send me your honest feedback, and tell me what you’d like to see in upcoming videos!
So with all that said, here’s my meal prep for last week! The recipes to my Lemon Blueberry Protein Muffins and Chocolate Kodiak Cake Cupcakes are below 🙂
- 1 egg
- 1/2 C dark chocolate Kodiak Cake pancake mix
- 1/4 C all-purpose flour
- 1/4 C unsweetened vanilla almond milk
- 2 small handfuls semi-sweet chocolate chips (about 1/3 cup)
- 1 t vanilla extract
- Preheat oven to 325 degrees.
- Stir everything together in one large bowl. Spoon into muffin tray sprayed with cooking spray.
- Bake about 20 minutes.
- 1 C protein powder
- 1/2 C almond flour
- 1 t baking powder
- 1/2 t baking soda
- 2 eggs
- 3/4 C unsweetened vanilla almond milk
- 2 lemons, zested and juiced
- 2 t vanilla extract
- 1 C fresh blueberries
- 1 t cornstarch
- Preheat oven to 325 degrees.
- In a large mixing bowl, whisk together almond flour, protein powder, baking powder and soda. Add eggs, milk, lemon zest and juice, and vanilla extract and stir until combined.
- In a separate bowl, coat blueberries in cornstarch. Fold into batter.
- Spoon into muffin trays sprayed with cooking spray and bake for about 20 minutes, until fully cooked. (Check by inserting a toothpick – when it comes out clean, they’re done.)
