YAS, another instant pot recipe!!!
I wanted to do an Instant Pot recipe that is geared for meal prep – just toss some things in (no chopping), hit a few buttons, and have a finished meal. These Instant Pot carrot cake steel cut oats take about 30 TOTAL minutes – including hands-off time. And it makes breakfast for a WEEK.
Plus I rarely make such a warm and comforting meal for breakfast when I meal prep. Normally it’s smoothie packs or yogurt something or muffins. This is just as convenient as instant oatmeal, but obviously much healthier and way more special since you can make it your own!
Oh yeah, and it tastes quite a lot like carrot cake. This is the perrrrrfect recipe for those of you who are trying to curb a sweet tooth. The recipe for everything in the slow cooker is only very mildly sweet, but you can add maple syrup or extra sugar to the top and slowly wean yourself off 😉
Alright! That’s all I have to say today. It’s recipe time!!!
- 1 1/2 C steel cut oats
- 3 C water
- 3/4 C coconut cream (plus more for the top)
- 3 T brown sugar
- 1 1/2 t ground cinnamon
- 1/2 t ground nutmeg
- tiny pinch salt
- 2 carrots, peeled and finely grated
- Spray the Instant Pot with cooking spray. Throw all ingredients in it. Set to cook on high pressure for 10 minutes, and allow the pressure to release naturally.
- When you serve this, it’s fantastic with some extra coconut cream, maple syrup, and cinnamon on top. Coconut butter, flaked coconut, or some nuts would be fantastic too.
