Buffalo Cauliflower Wings + Ranch Sauce

I officially found my favorite way to eat cauliflower.  Battered, baked, and covered in buffalo sauce.  Obviously.

This is a delicious recipe I found on An Edible Mosaic, which I just discovered this week and can’t stop looking at!  There are a lot of vegan and vegetarian (easily veganized) dishes on this site, plus some fantastic looking sauces (I’m talking amazing Indian and lots of other ethnic dishes – but really I’m excited about the Indian food) and sides that I badly want to make. 

I chose to start with a super simple veggie dish: cauliflower buffalo wings.  Fast, easy to veganize, and a really fun way to eat your veggies.    


cauliflower buffalo wings:

serves 6
1 head cauliflower, cut into florets
3/4 C flour
1 C unsweetened plain soy milk
1 t garlic powder
1/4 C Earth Balance margarine
1/4 C hot sauce

Preheat your oven to 450 degrees.  Spray a baking sheet with cooking spray.  Mix flour, soy milk, and garlic powder in a bowl.  Toss the cauliflower florets in the batter, then place on the baking sheet in a single layer.  Spray the tops of the cauliflower with more cooking spray.  Bake for about 20 minutes, until golden brown on top.

While they’re baking, make the buffalo sauce: melt Earth Balance and mix it with hot sauce.  Toss the cauliflower in the buffalo sauce when they’re done. 


ranch sauce:

I whipped up a quick ranch-style sauce to dip them in.  It was cooling and satisfying:

serves 6
1/2 C vegan mayo
juice of 1/2 lemon
1 T chopped dill
1 t garlic powder
salt & pepper

Mix everything together.

Last night I re-crisped the leftovers in some oil in a nonstick skillet and threw them on a salad.  I tossed some lettuce with the leftover ranch sauce, and topped it with sautéed onions and lentils, sliced olives, the cauliflower wings, and some of those canned crispy onions.  It tasted like junk food 🙂  How fun!

Even the boyfriend liked them.  He missed out on the fresh-out-of-the-oven wings (which was the best way to eat them), but got the reheated leftovers.  For some reason, he didn’t believe me when I told him that stuff he saw on his salad was buffalo wings 😉  He tried it, stared at it, and said, “This is cauliflower.  I don’t like cauliflower.  But I can eat it like this.”  And then devoured his entire salad.  I’ll take it.
